Vesuvius Roasted Potatoes is an Italian dish named after Mount Vesuvius, a volcano near the Bay of Naples in Italy.

So I invite you to try this super simple dish as a side dish to various dishes or simply when you don’t want anything but fried potatoes.

Vesuvius potatoes require minimal effort and basic ingredients, making them perfect for both beginners and experienced home cooks.

Vesuvius Roasted Potatoes

You will need:

  • 1 kg of potatoes (cut into slices);
  • 1 teaspoon of salt;
  • 1/2 teaspoon of white pepper;
  • 1 teaspoon oregano;
  • 2 tablespoons of olive oil;
  • Squeezed juice of 3 lemons.

For the sauce:

  • 6 tablespoons of butter;
  • 4 cloves of garlic;
  • 3 tablespoons of lemon juice;
  • 300 g of green peas.

How to produce:

Heat the oven to 200 degrees. Line a baking tray with baking paper.

Mix the potato slices with the rest of the products for the fries. Place in a baking tray and bake for 30 minutes. or until the fries are done.

For the sauce, melt the butter in a pan and fry the chopped garlic in it for 15 seconds. Add lemon juice and heat for another 15 seconds. Add the peas and heat for another 2-3 minutes.

Pour the sauce with the peas over the baked potatoes and mix.
